- Preheat your oven to 350°F (175°C).
- Grease a 9x13-inch baking dish with cooking spray or butter.
- Spread the thawed hashbrowns evenly across the bottom of the baking dish.
- Layer the cooked and crumbled breakfast sausage over the hashbrowns.
- In a bowl, mix together the shredded cheddar and mozzarella cheeses. Sprinkle half on top of the sausage.
- Whisk together the eggs, milk, salt, pepper, and garlic powder. Pour evenly over the layered ingredients.
- Sprinkle the remaining cheese mixture on top of the casserole.
- If desired, sprinkle diced bell peppers and onions on top.
- Bake for 45-50 minutes until bubbly and golden brown.
