  • 2 medium Zucchini Pick medium-sized zucchinis
  • 1 tablespoon Olive Oil Essential for sautéing
  • 1 whole Onion Finely chopped
  • 2 cloves Garlic Minced
For Seasoning
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Black Pepper
  • to taste Crushed Red Pepper Flakes Optional
For Extra Flavor
  • 1/2 cup Chicken Broth Can swap for vegetable broth
  • 1/4 cup Grated Parmesan Cheese For serving

Preparation Steps
  1. Heat the Olive Oil in a large skillet over medium heat for about 1-2 minutes.
  2. Sauté the onion in the hot oil for 3-4 minutes until soft and translucent.
  3. Add minced garlic and cook for an additional 30 seconds.
  4. Crumble ground turkey into the skillet, cooking for 6-8 minutes until browned.
  5. Slice zucchinis into half-moon shapes and add to the skillet, cooking for another 4-5 minutes.
  6. Season the mixture with dried oregano, salt, black pepper, and crushed red pepper flakes.
  7. Pour in chicken broth and let simmer on low for 3-4 minutes.
  8. Remove from heat and stir in grated Parmesan cheese until melted.
  9. Taste and adjust seasoning, then serve immediately.
