Ingredients
  

For the Soup Base
  • 2 tablespoons Olive Oil or substitute with vegetable or canola oil
  • 1 pound Ground Beef or consider ground turkey for a leaner option
  • 1 medium Onion diced, yellow or white
  • 1 medium Jalapeño Pepper diced, omit for milder soup
  • 3 cloves Garlic minced
  • 1 tablespoon Paprika smoked paprika for bolder flavor
  • 1 tablespoon Ground Cumin or taco seasoning
  • 1/2 teaspoon Crushed Red Pepper optional, adjust to taste
  • 28 ounces Crushed Tomatoes or diced tomatoes in a pinch
  • 4 cups Beef Broth or chicken broth
  • 1 teaspoon Salt to taste, low-sodium recommended
  • 1/2 teaspoon Black Pepper to taste
For the Extras
  • 1 can (15 ounces) Black Beans drained and rinsed
  • 1 cup Frozen Corn fresh or canned can be used

Method
 

Preparation Steps
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering, about 1-2 minutes.
  2. Add 1 diced onion and 1 diced jalapeño pepper, sauté for 3-4 minutes until onion is translucent.
  3. Stir in 3 minced garlic cloves, 1 tablespoon of paprika, 1 tablespoon of ground cumin, and optional crushed red pepper. Cook for 1 minute.
  4. Add 1 pound of ground beef, breaking it up with a spoon, and cook until browned, about 5-7 minutes.
  5. Pour in 28 ounces of crushed tomatoes and 4 cups of beef broth. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Bring to a simmer.
  6. Stir in 1 can of black beans and 1 cup of frozen corn. Simmer for an additional 10-15 minutes.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with toppings like avocado and cheese.
