- Bring a large pot of salted water to a rolling boil. Add the lasagna noodles and cook until al dente, about 8-10 minutes. Drain and lay flat to cool.
- Heat olive oil in a large skillet over medium heat. Add ground beef, breaking it up and cooking until browned, about 5-7 minutes. Stir in marinara sauce and diced tomatoes, simmer for 10 minutes. Season with salt, pepper, and Italian seasoning.
- In a mixing bowl, combine ricotta cheese, egg, and grated Parmesan cheese. Blend until smooth and creamy.
- Preheat oven to 375°F (190°C). In a greased baking dish, layer meat sauce, noodles, ricotta mixture, and mozzarella cheese. Repeat layers, finishing with noodles and sauce.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for another 20 minutes until the cheese is golden and bubbly.
- Allow lasagna to rest for 10 minutes before serving. Garnish with fresh basil or parsley.
