Step‑by‑Step Instructions
  1. Preheat your oven to 350ºF (175ºC).
  2. In a large skillet, heat 2 tablespoons of neutral oil over medium heat.
  3. Add a chopped large onion and a medium red bell pepper. Sauté these for about 4 minutes until the onion turns translucent.
  4. Add 1 pound of lean ground beef to the skillet, cooking for 6-8 minutes until the beef is browned.
  5. Stir in 2 tablespoons of tomato paste and 1 tablespoon of taco seasoning, cooking for another 2 minutes.
  6. Mix in 1 cup of frozen corn and 1 can of diced green chiles.
  7. Reserve 1 cup of red enchilada sauce, then mix the remainder into the skillet with the beef mixture. Season with kosher salt to taste.
  8. Spread ½ cup of reserved enchilada sauce in a baking dish, layer with 6 corn tortillas, half of refried beans, half of beef mixture, and sprinkle with 1/3 of the cheeses.
  9. Repeat these layers, topping with remaining tortillas, enchilada sauce, and cheese mixture. Cover with foil.
  10. Bake for 30-35 minutes until the cheese is bubbling and golden. Let cool for about 10 minutes before serving.
