- In a medium bowl, combine freshly minced garlic, honey, soy sauce, and rice vinegar. Whisk until fully incorporated.
- In a small bowl, dissolve cornstarch in water until smooth.
- Heat a large skillet over medium-high heat and pour in vegetable oil; heat until shimmering.
- Season chicken breasts with salt and pepper, then add to the hot skillet. Cook for 5-7 minutes until golden brown.
- In the same skillet, stir-fry bell pepper, broccoli, and carrot for 4-5 minutes until tender-crisp.
