Method
 

Marinade Preparation
  1. In a large mixing bowl, whisk together the brown sugar, vegetable oil, fresh orange juice, and lime juice. Add minced garlic, dried thyme, minced fresh ginger, rum extract, allspice, and cayenne pepper. Mix until the sugar is dissolved and marinade is well-combined.
Marination
  1. Place chicken in a zip-top bag or shallow dish. Pour marinade over chicken, ensuring it's evenly coated. Seal the bag or cover the dish tightly and refrigerate for at least 4 hours, preferably overnight.
Grilling
  1. Preheat the grill to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking. Remove chicken from marinade, letting excess drip off, and grill for 5-7 minutes per side until cooked through.
Resting the Chicken
  1. Transfer grilled chicken to a clean plate and let it rest for 5 minutes.
Glaze Preparation
  1. Combine honey, orange juice, and zest in a small bowl. Add a pinch of ground ginger if desired. Warm in the microwave for 10-15 seconds and stir until well combined.
Serving
