Ingredients
  

For the Base
  • 2 cups Milk Use whole or low-fat.
  • 8 large Eggs For the best results.
  • ¼ cup Green Onions Finely chopped.
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
For the Filling
  • 8 ounces Canadian Bacon Or substitute with cooked ham or turkey bacon.
  • 6 pieces English Muffins Day-old preferred to prevent sogginess.
For the Topping
  • 1 teaspoon Paprika For color and flavor.
  • 1 package Hollandaise Sauce Mix Or use homemade.
  • ½ cup Butter Enhances the richness.

Method
 

Instructions
  1. Grease a 9x13-inch baking dish with non-stick cooking spray or a light layer of butter.
  2. In a large mixing bowl, whisk together the milk, eggs, green onions, onion powder, and salt until fully blended.
  3. Layer half of the Canadian bacon evenly across the bottom of the baking dish. Add all the diced English muffins, followed by the remaining bacon.
  4. Pour the egg mixture over the muffin and bacon layers completely.
  5. Cover tightly with plastic wrap and refrigerate for at least 8 hours or overnight.
  6. Preheat your oven to 375°F (190°C). Remove from the refrigerator, sprinkle paprika over the top, cover with foil, and bake for 30 minutes.
  7. Remove the foil and continue baking for an additional 15 minutes.
  8. For the Hollandaise sauce, whisk together the milk and sauce mix in a saucepan until thickened, add butter, and keep warm.
  9. Slice into 10 portions, drizzle with Hollandaise sauce, and serve warm.
