Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry and season with salt, pepper, rosemary, and thyme.
  3. Heat olive oil in the skillet, sear chicken skin-side down for 5-7 minutes, then flip and sear the other side for 3-4 minutes.
  4. Sauté onions and garlic in the same skillet for 2-3 minutes, then add mushrooms and potatoes, cooking for another 5 minutes.
  5. Pour in chicken broth and heavy cream, stirring to combine, and scrape up browned bits.
  6. Nestle seared chicken thighs skin-side up into the sauce.
  7. Bake in the oven for 30-35 minutes until chicken reaches 165°F (75°C) and potatoes are fork-tender.
