  • 2 tablespoons Butter Olive oil can be used for a dairy-free version.
Seasoning and Extras
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Equipment

  • Skillet
  • mixing bowl
  • grill or frying pan

Method

Step-by-Step Instructions
  1. In a skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Transfer the bacon to a plate lined with paper towels, leaving a tablespoon of bacon fat in the skillet.
  2. Add the sliced onions to the skillet and cook over medium heat for 10-15 minutes until golden brown and soft. Pour in the Irish stout and continue cooking until the liquid reduces by half. Season with salt and pepper.
  3. In a mixing bowl, combine ground beef with Worcestershire sauce, salt, and pepper. Mix gently and form into 4 patties.
  4. Preheat a grill or frying pan over medium-high heat. Cook patties for 3-4 minutes on each side, adding cheddar cheese in the last minute to melt.
  5. In a small bowl, combine sour cream, Dijon mustard, and a pinch of salt. Stir until smooth and creamy.
  6. Melt butter in a skillet over medium heat and toast the brioche burger buns until golden brown, about 2-3 minutes.
  7. Assemble the burgers by placing the beef patty on each bun bottom, topping with cheddar, caramelized onions, and bacon, then drizzle with sauce and cover with the bun lid.
  8. Serve hot with sides like sweet potato fries or salad.
