  • 1 pound Beef Short Ribs
For the Spice Blend
  • 3 pieces Guajillo Chiles
  • 2 pieces Ancho Chiles
  • 2 pieces Pasilla Chiles
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Dried Oregano
  • 1 pinch Ground Cinnamon
  • 10 pieces Black Peppercorns
  • 4 pieces Whole Cloves
For the Sauce
  • 1 whole White Onion
  • 4 cloves Garlic Cloves
  • 2 pieces Roma Tomatoes
  • 1 leaf Bay Leaves
For the Consommé
  • 4 cups Beef Broth
  • 2 cups Water
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Kosher Salt
For Serving
  • 12 pieces Corn Tortillas
  • 1 cup Diced White Onion
  • 1 cup Fresh Cilantro
  • 2 whole Lime Wedges
  • 1 cup Shredded Oaxaca or Mozzarella Cheese (optional)
  • 1 cup Vegetable Oil

Method
 

Step-by-Step Instructions
  1. Toast the chiles in a dry skillet over medium heat for 3-4 minutes.
  2. Sauté the chopped onion and minced garlic in the same skillet for 5-6 minutes.
  3. Blend the toasted chiles, sautéed onion, garlic, tomatoes, cumin, oregano, and cinnamon until smooth.
  4. In a slow cooker, place the beef, pour the blended sauce, add broth and bay leaf, and stir gently.
  5. Cover and cook on low for about 8 hours until beef is tender.
  6. Strain the liquid to create a consommé and adjust seasoning with salt or vinegar.
  7. Fry the tortillas in skillet with vegetable oil until crispy.
  8. Assemble the tacos with shredded beef, diced onion, cilantro, and lime.
