Method

Preparation Steps
  1. Step 1: Prepare the Chicken. Cut the boneless chicken thighs or breasts into thin strips, about an inch wide.
  2. Step 2: Marinate the Chicken. Whisk together soy sauce, brown sugar, coconut milk, curry powder, minced garlic, and lime juice. Add chicken pieces, coat well, and refrigerate for at least 30 minutes.
  3. Step 3: Soak the Skewers. Soak bamboo skewers in water for at least 15 minutes to prevent burning.
  4. Step 4: Prepare the Peanut Sauce. Combine peanut butter, soy sauce, lime juice, honey, minced garlic, and coconut milk in a saucepan. Heat and stir until smooth.
  5. Step 5: Assemble the Skewers. Thread marinated chicken onto soaked skewers, leaving space between each piece.
  6. Step 6: Preheat the Grill. Heat your grill to medium-high (about 400°F or 200°C).
  7. Step 7: Cook the Chicken. Grill skewers for 4 to 5 minutes on each side until charred and golden-brown.
  8. Step 8: Serve the Satay. Remove skewers from the grill, let rest for a minute, and serve with peanut sauce.
  9. Step 9: Garnish. Sprinkle sesame seeds or chopped cilantro over the skewers.
