Preparation Steps
- Step 1: Prepare the Chicken. Cut the boneless chicken thighs or breasts into thin strips, about an inch wide.
- Step 2: Marinate the Chicken. Whisk together soy sauce, brown sugar, coconut milk, curry powder, minced garlic, and lime juice. Add chicken pieces, coat well, and refrigerate for at least 30 minutes.
- Step 3: Soak the Skewers. Soak bamboo skewers in water for at least 15 minutes to prevent burning.
- Step 4: Prepare the Peanut Sauce. Combine peanut butter, soy sauce, lime juice, honey, minced garlic, and coconut milk in a saucepan. Heat and stir until smooth.
- Step 5: Assemble the Skewers. Thread marinated chicken onto soaked skewers, leaving space between each piece.
- Step 6: Preheat the Grill. Heat your grill to medium-high (about 400°F or 200°C).
- Step 7: Cook the Chicken. Grill skewers for 4 to 5 minutes on each side until charred and golden-brown.
- Step 8: Serve the Satay. Remove skewers from the grill, let rest for a minute, and serve with peanut sauce.
- Step 9: Garnish. Sprinkle sesame seeds or chopped cilantro over the skewers.

Notes
For best flavor, use fresh ingredients and marinate for longer if possible. Soak bamboo skewers to avoid burning during grilling.
