Ingredients
  

For the Lasagna
  • 12 oz Lasagna Noodles Follow package instructions for perfect texture.
  • 2 tablespoons Olive Oil For sautéing.
  • 1 medium Yellow Onion Diced.
  • 2-3 cloves Garlic Minced.
  • 1 pound Ground Turkey (93% fat) Lean protein.
For the Sauce
  • 2 cups Tomato Sauce Plain is best.
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Sugar Optional.
  • to taste Kosher Salt
  • to taste Black Pepper
  • to taste Red Pepper Flakes
For the Cheese Mixture
  • 15 oz Ricotta Cheese Can substitute with cottage cheese.
  • 1 large Eggs Optional.
  • 2 cups Mozzarella Cheese Freshly grated, reserve some for topping.
  • 1/2 cup Parmesan Cheese Freshly grated is best.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare the baking dish with cooking spray.
  2. Cook the lasagna noodles according to the package instructions, about 8-10 minutes, until al dente.
  3. Heat olive oil in a large skillet, sauté the diced onion for 3-4 minutes, then add minced garlic for another minute.
  4. Brown the ground turkey in the skillet for 5-7 minutes, breaking it up until fully cooked.
  5. Mix in tomato sauce, tomato paste, oregano, basil, sugar, salt, and pepper. Simmer for 5 minutes.
  6. Combine ricotta cheese, egg, and half of the grated mozzarella and parmesan in a mixing bowl.
  7. Assemble the lasagna in layers: sauce, noodles, cheese mixture, repeat, finishing with sauce.
  8. Top with reserved mozzarella and parmesan. Bake uncovered for 30 minutes until bubbly and golden brown.
  9. Let the dish rest for 10 minutes before slicing to serve.
