Prepare the dough
- Cream the butter and sugar on medium speed for 3-4 minutes until light and fluffy. Add vanilla and salt, mix until combined. Gradually incorporate flour until a soft dough forms.
Shape and chill
- Divide the dough into two portions, roll each into a log, wrap in parchment paper, and chill for at least 1 hour.
Slice and bake
- Preheat the oven to 350°F (175°C). Slice the chilled logs into 1/4-inch rounds and arrange on baking sheets. Bake for 10-12 minutes until edges turn golden.
Cool
- Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack.
