Preparation Steps
  1. In a large bowl, combine ground beef, sea salt, and black pepper. Mix gently, then divide into 12 equal portions and shape into patties.
  2. In a small bowl, whisk together mayonnaise, minced garlic, Dijon mustard, and lemon juice. Season and refrigerate for at least 10 minutes.
  3. Heat olive oil in a skillet over medium heat. Cook patties for 3-4 minutes on each side until browned and reach 160°F.
  4. Slice and toast mini brioche buns cut-side down in the skillet for about 30 seconds until golden.
  5. Assemble sliders by spreading garlic aioli on the bottom half of each bun, followed by lettuce, a cheese-topped patty, and quick-pickled cucumber before topping with the bun.
