  • 2 cups Cottage Cheese or Ricotta Ricotta delivers a richer consistency.
  • 1 cup Parmesan Cheese Grated or shredded works well.
  • 1/2 cup Prepared Pesto Omit or swap with fresh basil if desired.
Topping
  • 2 cups Shredded Mozzarella Fresh mozzarella is recommended.

Method
 

Instructions
  1. Cook the lasagna noodles in a large pot of salted boiling water according to package instructions. Drain and lay them flat to prevent sticking.
  2. In a large skillet, brown the ground beef and sausage for 8-10 minutes. Drain excess fat and stir in spaghetti sauce, simmering for a few minutes.
  3. Mix cottage cheese or ricotta with grated Parmesan and pesto in a bowl until smooth.
  4. Preheat oven to 350°F. Spread some meat sauce on the bottom of the baking pan.
  5. Layer lasagna noodles on top, followed by meat sauce, cheese mixture, and shredded mozzarella. Repeat layers.
  6. Bake covered for about 30 minutes or freeze well-covered for later.
