Ingredients
  

  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1 ripe mango diced
  • 1 red bell pepper diced
  • 1 small red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1/4 cup fresh cilantro chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the chickpeas, diced mango, red bell pepper, red onion, cherry tomatoes, avocado, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper.
  3. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
