Preparation Steps
- Preheat your oven to 180°C (350°F).

- In the same pot, sauté chopped onions, carrots, and bell peppers for 5–7 minutes until softened.
- Pour in gluten-free stock, dried thyme, and bay leaves. Stir and simmer for 3–5 minutes.
- Return the browned sausages to the pot and mix them with the vegetables and sauce.
- Transfer the mixture to a casserole dish, adding optional veggies if desired.
- Bake in the oven for 1 hour until bubbling and golden.
- Let the casserole cool for 5–10 minutes before serving.
