  • 2 cups Tomatoes halved or quartered ripe for best flavor
  • 1 medium Red Bell Pepper finely diced
  • 1 medium Red Onion thinly sliced
  • 3 cloves Garlic minced
  • 8 oz Feta Cheese preferably block version
  • 2 tablespoons Olive Oil California Olive Ranch recommended
For the Seasoning
  • 1 teaspoon Oregano substitute with Italian seasoning if unavailable
  • to taste Salt taste before adding
  • 1 teaspoon Thyme
  • to taste Black Pepper use freshly ground
  • 1/4 teaspoon Red Pepper Flakes adjust based on spice preference
For the Veggies & Eggs
  • 2 cups Spinach stir until just wilted
  • 1 teaspoon Lemon Zest adjust to taste
  • 6 large Eggs use room temperature
  • 1 tablespoon Fresh Basil optional garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Finely dice the red bell pepper and thinly slice the red onion. Mince the garlic. Place the tomatoes, peppers, onion, and garlic into an oven-safe baking dish.
  3. Drizzle olive oil over the vegetables. Crumble the feta cheese atop, then sprinkle oregano, salt, thyme, black pepper, and red pepper flakes evenly.
  4. Bake for approximately 25 minutes until vegetables soften and feta turns melty.
  5. Remove from oven and stir the roasted vegetables. Fold in fresh spinach until wilted.
  6. Make shallow wells in the mixture for the eggs.
  7. Crack room temperature eggs into the wells, adding lemon zest on top.
  8. Return to the oven for 8 to 10 minutes, monitoring closely.
  9. Remove from oven and let it rest for a few minutes. Garnish with fresh basil.
