- Preheat your oven to 400°F (200°C).
- Lightly coat the baking dish with olive oil.
- Combine the sliced onions, bell peppers, cherry tomatoes, and minced garlic in a bowl. Add olives and capers if desired, drizzle with olive oil, and mix with herbs and seasonings.
- Spread the vegetable mixture evenly in the greased baking dish.
- Place fish fillets on top of the vegetables, skin side down if applicable.
- Squeeze lemon juice over the fish and sprinkle with lemon zest, salt, and pepper.
- Bake uncovered for 20-25 minutes until fish flakes easily and vegetables soften.
- Garnish with freshly chopped parsley and serve with lemon wedges.
