Ingredients
  

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons olive oil
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup tzatziki sauce

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, oregano, salt, pepper, and egg. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Drizzle olive oil over the meatballs and bake for 20-25 minutes, or until cooked through and golden brown.
  5. While the meatballs are baking, prepare the quinoa according to package instructions.
  6. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, and red onion. Toss gently to mix.
  7. To serve, place a scoop of the quinoa salad in a bowl, top with meatballs, sprinkle with feta cheese, and drizzle with tzatziki sauce.
