- In a skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and continue cooking for an additional 30 seconds.
- In a large mixing bowl, combine the sautéed onion and garlic with the chopped spinach, ground chicken, breadcrumbs, Greek yogurt, fresh dill, lemon juice, oregano, paprika, cumin, salt, and black pepper. Mix until all ingredients are well incorporated.
- Divide the mixture into equal portions to form approximately 8 patties, each about ½ inch thick. Wet your hands to prevent sticking and shape each portion into a round patty.
- Wipe the skillet clean and pour in the remaining olive oil, heating it over medium heat. Once shimmering, gently place the patties in the skillet. Cook for about 5-6 minutes on each side until golden brown and cooked through.
- Remove the patties from the skillet and place them on paper towels to drain excess oil. Serve warm, garnished with extra fresh dill or a dollop of Greek yogurt.
