Step-by-Step Instructions
  1. In a skillet over medium heat, brown the ground beef for about 8–10 minutes, breaking it apart with a spatula until cooked through. Drain excess grease, then mix in taco seasoning and 1/4 cup of water. Allow to simmer for 5 minutes.
  2. While the beef is simmering, warm your large flour tortillas in a dry skillet over low heat for about 30 seconds per side or microwave wrapped in a damp paper towel for 20 seconds.
  3. Spread one tortilla flat and layer it with a scoop of cooked rice, seasoned beef, nacho cheese sauce, sour cream, chipotle sauce, and a sprinkle of shredded cheddar and mozzarella cheese.
  4. Heat a skillet over medium heat and add a little butter or oil. Place the assembled burrito seam-side down and sprinkle additional cheese around the edges. Cook for 3–4 minutes until golden, then flip and grill the other side.
  5. Once golden and crispy, remove the burrito and let it cool for a minute. Slice in half diagonally and serve with salsa or guacamole.
