- In a skillet over medium heat, brown the ground beef for about 8–10 minutes, breaking it apart with a spatula until cooked through. Drain excess grease, then mix in taco seasoning and 1/4 cup of water. Allow to simmer for 5 minutes.
- While the beef is simmering, warm your large flour tortillas in a dry skillet over low heat for about 30 seconds per side or microwave wrapped in a damp paper towel for 20 seconds.
- Spread one tortilla flat and layer it with a scoop of cooked rice, seasoned beef, nacho cheese sauce, sour cream, chipotle sauce, and a sprinkle of shredded cheddar and mozzarella cheese.
- Heat a skillet over medium heat and add a little butter or oil. Place the assembled burrito seam-side down and sprinkle additional cheese around the edges. Cook for 3–4 minutes until golden, then flip and grill the other side.
- Once golden and crispy, remove the burrito and let it cool for a minute. Slice in half diagonally and serve with salsa or guacamole.
