  • 1 teaspoon Salt kosher or table salt
For the Filling & Topping
  • 1 cup Milk Chocolate or dark chocolate for a richer flavor
  • 1/4 cup Cinnamon Sugar for dusting

Method
 

Step-by-Step Instructions
  1. Begin by creaming the butter with light brown sugar and vanilla extract, then mix in eggs one at a time. Gradually add flour, baking soda, and spices until a soft dough forms.
  2. Divide the dough, flatten into discs, roll out and cut into pumpkin shapes, chill in the freezer for 15-20 minutes.
  3. Preheat oven to 350°F (175°C). Bake cookies for 8-12 minutes until lightly golden, then cool on a rack.
  4. Melt butter in a saucepan until browned, cool slightly and brush on half the cookies, dust with cinnamon sugar.
  5. Melt milk chocolate, spread on plain cookies, and sandwich with decorated ones.
