Step-by-Step Instructions for Mini Meatloaf
  1. Preheat your oven to 350°F (175°C) and spray a muffin tin with nonstick cooking spray.
  2. In a large bowl, mix ground beef, minced onion, eggs, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and half of the ketchup until just combined.
  3. Spoon the meatloaf mixture into the prepared muffin tin, filling each cup about three-quarters full.
  4. Mix the remaining ketchup with brown sugar and mustard, then drizzle over the tops of each muffin.
  5. Bake in the oven for 30 minutes or until the tops are browned and a meat thermometer reads 160°F.
  6. Let the muffins cool for about 5 minutes before gently removing them from the tin.
