- In a mixing bowl, combine fresh lemon slices, granulated sugar, fresh mint leaves, and rosemary sprigs along with the vanilla seeds. Gently massage the mixture for 3-5 minutes until the lemon juice is released.
- Cover the bowl with plastic wrap and refrigerate the mixture for at least 3-4 hours, preferably overnight.
- Using a fine-mesh strainer, strain the mixture into a pitcher to separate the juice from solids. Discard the solids.
- Add 8 cups of cold water to the juice concentrate in the pitcher, stirring well to combine.
