  • 1 cup Butter softened
  • 1 cup Sugar can substitute brown sugar
  • 1 tbsp Orange Zest
  • 3 large Eggs can use aquafaba as a vegan substitute
  • 1 tsp Vanilla Extract optional
  • 1 cup Buttermilk or mix regular milk with vinegar
  • 2 cups Fresh Cranberries can use frozen
  • 2 cups Flour all-purpose or 1:1 gluten-free blend
  • 2 tsp Baking Powder ensure freshness
  • 1 tsp Salt small pinch
For the Glaze
  • 1 cup Powdered Sugar can substitute with sugar alternative
  • 2 tbsp Orange Juice can use lemon juice
  • 1 tbsp Milk any variety

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, sugar, and orange zest for 3-5 minutes until fluffy.
  3. Add the eggs one at a time, mixing until fully combined.
  4. Mix in the vanilla extract until just combined.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk.
  7. Fold in the cranberries gently.
  8. Grease and flour two 9x5 or three 8x4 loaf pans and fill them with the batter.
  9. Bake in the preheated oven for 55-60 minutes.
  10. Cool in pans for 10 minutes, then transfer to a wire rack.
  11. Whisk together the glaze ingredients and pour over the cooled cakes.
