- Begin by dicing your russet or Yukon gold potatoes into small, even pieces. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the diced potatoes and sauté them for about 10-12 minutes, stirring occasionally, until they become tender and golden brown.
- Push the cooked potatoes to the side of the skillet, creating space for the ground meat. Add the ground beef (or your choice of turkey or chicken) directly into the pan. Brown the meat for about 5-7 minutes, breaking it apart with a spatula until no longer pink.
- Once the meat is thoroughly cooked, stir in your diced vegetables. Sprinkle in salt, black pepper, and garlic powder. Continue to cook for an additional 5 minutes until the vegetables are softened and fragrant.
- Carefully mix the sautéed potatoes back into the skillet. Reduce the heat to medium and let the mixture simmer for about 3-5 minutes to meld the flavors together.
- Sprinkle a generous amount of shredded cheddar cheese evenly over the top of the skillet mixture. Cover the skillet with a lid and let it cook for about 3-4 minutes until the cheese melts.
