- Slice the onions thinly. Melt butter (or olive oil) in a large pot over medium heat. Add onions and sauté for about 5 minutes until they begin to soften.
- Reduce heat to medium-low and continue cooking the onions for an additional 10–15 minutes until they are golden-brown.
- Pour in the broth and bring it to a gentle boil. Stir in the pasta, along with salt and pepper to taste.
- Reduce heat to low, cover, and simmer for 12–15 minutes, stirring occasionally until pasta is al dente.
- Remove from heat, stir in parmesan cheese until melted, and add in the fresh herbs.
- Serve hot, garnishing with additional cheese and herbs as desired.
