  • 1 cup Rice gluten-free if needed
  • 2 cups Bell Peppers diced; can substitute with zucchini or corn
  • 1 can Tomatoes diced; use with green chilies for extra kick
  • 1 medium Onion diced; shallots can be used for milder taste
  • 2 cloves Garlic minced; fresh is best
  • 1 teaspoon Cumin or substitute with coriander or chili powder
  • 1 teaspoon Chili Powder adjust for heat preference
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Cooking Steps
  1. Brown the beef in a large skillet over medium heat for 5-7 minutes until fully browned.
  2. Add diced onion and chopped bell peppers, sauté for 4-5 minutes until softened.
  3. Stir in minced garlic, cumin, and chili powder, cooking for an additional minute until fragrant.
  4. Introduce rice to the skillet, mix well, and toast for about 2 minutes.
  5. Pour in diced tomatoes and broth, bring to a boil, then reduce heat to low to simmer.
  6. Cover and let it simmer for about 20 minutes until rice is tender and has absorbed the liquid.
  7. Remove from heat, fluff the rice gently with a fork and serve.
