  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice optional

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the carrot sticks, olive oil, oregano, garlic powder, salt, and black pepper. Toss until the carrots are evenly coated.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through for even cooking.
  5. If desired, drizzle with fresh lemon juice before serving.
