- Preheat your oven to 375°F (190°C). Gather your ingredients and tools, including an oven-safe skillet.
- Pat the chicken thighs dry with paper towels, then season with paprika, salt, and black pepper.
- In your preheated skillet, add olive oil and 1 tablespoon of butter. Once hot, sear the chicken thighs for 3-4 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, reduce heat and add the remaining tablespoon of butter. Once melted, sauté minced garlic for about 1 minute. Stir in heavy cream, chicken broth, Parmesan, and Italian herbs, simmering for 2-3 minutes.
- Return chicken to skillet, nestling into the sauce. Spoon sauce over the chicken to coat.
- Transfer the skillet to the oven and bake uncovered for 25-30 minutes until the chicken reaches 165°F (74°C).
- Once out of the oven, let it rest for a few minutes and garnish with fresh parsley or dill before serving.
