Ingredients

  • 2 6-ounce salmon fillets
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 3 cloves garlic finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • Lemon wedges for decoration
  • Chopped fresh parsley for topping

Method

  1. Begin by heating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or giving it a light coat of cooking spray.
  2. In a mixing bowl, combine the olive oil, lemon juice, chopped garlic, oregano, sea salt, and black pepper, stirring until well blended.
  3. Position the salmon fillets on the prepared baking sheet with the skin facing down. Generously drizzle the lemon-garlic mixture over the fillets, ensuring they are well coated.
  4. Top each fillet with lemon wedges to enhance the flavor and presentation.
  5. Place the baking sheet in the oven and bake for approximately 12-15 minutes, or until the salmon is tender and flakes easily when tested with a fork.
  6. Once done, take the salmon out of the oven and allow it to rest for a few moments. Finish by sprinkling fresh parsley on top before serving.
