  • 10 slices stale bread for better absorption
  • 1 cup pumpkin puree
  • 5 eggs beaten until pale
  • 2 cups milk can use almond milk
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg adjust to taste
  • 1/2 cup sugar brown sugar recommended
For the Streusel Topping
  • 1/2 cup butter or vegan margarine
  • 1/2 cup brown sugar

Method
 

Casserole Preparation
  1. Grease a 9x13-inch baking dish with butter or cooking spray and arrange slices of stale bread in the dish.
  2. In a large mixing bowl, whisk eggs, milk, pumpkin puree, sugar, cinnamon, and nutmeg until smooth.
  3. Pour the custard mixture over the bread, gently pressing to absorb.
  4. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  5. Prepare streusel by melting butter, then mixing with brown sugar and optional oats until crumbly.
  6. Preheat oven to 350°F (175°C), sprinkle streusel on top, and bake for 50 minutes until golden brown.
  7. Cool for 10 minutes before slicing and serve with maple syrup or whipped cream.
