- Wash the ripe, organic peaches under cold water, pit and chop them into small pieces. Aim for about one cup of fruit.
- In a blender, combine the prepared peaches with honey, Dijon mustard, balsamic vinegar, and olive oil. Blend on high for about 30 seconds.
- Add a pinch of salt and pepper to taste, and blend briefly for about 5-10 seconds.
- Transfer the vinaigrette into a clean glass jar or airtight container, seal tightly, and refrigerate for at least 30 minutes.
