Step-by-Step Instructions for Pumpkin French Toast Bites
- In a large mixing bowl, whisk together 3 eggs, 1 cup of milk, 1 cup of canned pumpkin puree, 2 tablespoons of granulated sugar, 1 teaspoon of vanilla extract, 1 teaspoon of ground cinnamon, ½ teaspoon of ground nutmeg, ½ teaspoon of ground ginger, and a pinch of salt. Ensure the mixture is smooth and well-combined.
- Cut 6 slices of brioche or challah into bite-sized cubes and add them to the custard mixture. Gently toss the bread cubes until they are fully coated with the custard. Allow the bread to soak for about 10-15 minutes.
- While the bread is soaking, heat a large skillet over medium heat and add 1 tablespoon of butter. Let the butter melt and foam.
- Add half of the soaked bread cubes to the skillet in a single layer. Cook for about 3-4 minutes until golden brown and crispy on one side. Flip each piece and cook the other side for another 3-4 minutes.
- Remove the first batch and repeat with the remaining soaked bread cubes, adding another tablespoon of butter if needed.
