Step-by-Step Instructions for Pumpkin French Toast Bites
  1. In a large mixing bowl, whisk together 3 eggs, 1 cup of milk, 1 cup of canned pumpkin puree, 2 tablespoons of granulated sugar, 1 teaspoon of vanilla extract, 1 teaspoon of ground cinnamon, ½ teaspoon of ground nutmeg, ½ teaspoon of ground ginger, and a pinch of salt. Ensure the mixture is smooth and well-combined.
  2. Cut 6 slices of brioche or challah into bite-sized cubes and add them to the custard mixture. Gently toss the bread cubes until they are fully coated with the custard. Allow the bread to soak for about 10-15 minutes.
  3. While the bread is soaking, heat a large skillet over medium heat and add 1 tablespoon of butter. Let the butter melt and foam.
  4. Add half of the soaked bread cubes to the skillet in a single layer. Cook for about 3-4 minutes until golden brown and crispy on one side. Flip each piece and cook the other side for another 3-4 minutes.
  5. Remove the first batch and repeat with the remaining soaked bread cubes, adding another tablespoon of butter if needed.
  6. Serve the cooked Pumpkin French Toast Bites warm, drizzled with maple syrup and dusted with powdered sugar.
