Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8" square pan by greasing or lining it with parchment paper.
  2. In a medium saucepan over medium heat, combine sugar, pumpkin purée, oil, butter, pumpkin pie spice, and salt. Stir for about 3-5 minutes until smooth and slightly warmed.
  3. Remove from heat and allow to cool for about 10-15 minutes, stirring occasionally.
  4. Once cooled, stir in the room-temperature egg. Gently add flour and baking powder. Mix until just combined.
  5. Pour the batter into the prepared pan, smoothing it out evenly.
  6. Bake for 32-36 minutes until a toothpick comes out clean from the center.
  7. Allow the bars to cool in the pan for about 15 minutes, then transfer them to a wire rack.
  8. To prepare the glaze, gently heat milk, espresso powder, and a pinch of salt until dissolved. Mix in confectioners' sugar until smooth.
  9. Drizzle the glaze over the cooled bars and allow to set before slicing.
