- Gather all the ingredients for the dressing and find a pint jar with a tight-fitting lid.
- Pour ¾ cup of extra-virgin olive oil into the jar. Add ¼ cup of freshly squeezed lemon juice and the zest of one lemon, followed by 2 tablespoons of red wine vinegar and 1 tablespoon of Dijon mustard.
- Sprinkle in 1 teaspoon of dried oregano and 1 minced garlic clove, then gently mix them in before sealing the jar.
- Shake the jar vigorously for about 15-20 seconds until the ingredients blend together into a creamy emulsion.
- If including feta, add approximately ¼ cup and shake gently again for another 10 seconds. Season to taste with salt and pepper.
- Let the dressing rest for at least 10 minutes at room temperature before serving.
- Store any leftovers in an airtight container in the refrigerator for up to 3 weeks.
