Step-by-Step Instructions
  1. Gather all the ingredients for the dressing and find a pint jar with a tight-fitting lid.
  2. Pour ¾ cup of extra-virgin olive oil into the jar. Add ¼ cup of freshly squeezed lemon juice and the zest of one lemon, followed by 2 tablespoons of red wine vinegar and 1 tablespoon of Dijon mustard.
  3. Sprinkle in 1 teaspoon of dried oregano and 1 minced garlic clove, then gently mix them in before sealing the jar.
  4. Shake the jar vigorously for about 15-20 seconds until the ingredients blend together into a creamy emulsion.
  5. If including feta, add approximately ¼ cup and shake gently again for another 10 seconds. Season to taste with salt and pepper.
  6. Let the dressing rest for at least 10 minutes at room temperature before serving.
