- Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large skillet over medium-high heat, cook diced bacon and chopped sweet onion for 10 minutes until bacon is golden and onions are translucent. Drain excess grease.
- In a large mixing bowl, whisk together lightly beaten eggs, then fold in the cooked bacon and onion mixture. Add hash browns, cheddar cheese, cottage cheese, and Swiss cheese.
- Transfer the mixture to the prepared baking dish, smoothing the top evenly.
