  • 2 tablespoons Fresh Thyme or 1 tablespoon dried thyme
  • 1 tablespoon Honey or maple syrup
  • to taste Sea Salt
  • to taste Cracked Pepper

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) for regular ovens or 200°C (390°F) for non-fan ovens. Prepare your baking sheet with parchment paper.
  2. Lay puff pastry sheets flat and drizzle honey evenly across each, soaking into the pastry.
  3. Distribute chopped walnuts, crumbled blue cheese, grated Parmesan, and fresh thyme over each honey-drizzled pastry sheet. Season with salt and pepper.
  4. Roll each pastry sheet tightly from one end to the other and cut each log in half lengthwise, tucking edges to seal.
  5. Place each rolled pastry half on the baking sheet and gently twist into a coil, pinching ends to maintain shape.
  6. Brush milk over each twist for a golden finish and place in the oven.
  7. Bake for 25–30 minutes until pastries are puffed and golden brown.
  8. Remove from oven, cool slightly, and serve warm with extra thyme sprinkled on top.
