- Preheat your oven to 180°C (350°F) for regular ovens or 200°C (390°F) for non-fan ovens. Prepare your baking sheet with parchment paper.
- Lay puff pastry sheets flat and drizzle honey evenly across each, soaking into the pastry.
- Distribute chopped walnuts, crumbled blue cheese, grated Parmesan, and fresh thyme over each honey-drizzled pastry sheet. Season with salt and pepper.
- Roll each pastry sheet tightly from one end to the other and cut each log in half lengthwise, tucking edges to seal.
- Place each rolled pastry half on the baking sheet and gently twist into a coil, pinching ends to maintain shape.
- Brush milk over each twist for a golden finish and place in the oven.
- Bake for 25–30 minutes until pastries are puffed and golden brown.
- Remove from oven, cool slightly, and serve warm with extra thyme sprinkled on top.
