Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) for even baking.
  2. In a large baking dish, combine onion, red bell pepper, brown rice, fajita seasoning, and cayenne pepper until well mixed.
  3. In a separate bowl, whisk together chicken broth, green chiles, tomato paste, and olive oil. Pour over the rice and veggies.
  4. Fold in shredded chicken, black beans, and corn kernels until combined.
  5. Cover the dish with aluminum foil and bake for 65-70 minutes until liquid is absorbed and rice is tender.
