  • 2 tablespoons Cornstarch For crispy texture.
  • 1 tablespoon Mirin Sweet rice wine.
  • 1 tablespoon Brown Sugar Can use coconut sugar.
  • 1 tablespoon Oil Neutral oil for stir-frying.
  • 2 cloves Minced Garlic Fresh garlic preferred.
For the Wrap
  • 4 sheets Nori Cut into small rectangles.

Method
 

Step-by-Step Instructions
  1. Cook sushi rice in a rice cooker or on the stovetop as per package instructions and cool slightly.
  2. Mix in fine salt and optional furikake once cooled.
  3. Cut chicken into uniform pieces and marinate with soy sauce, sake, baking soda, and cornstarch for 30 minutes.
  4. Whisk together soy sauce, mirin, and brown sugar for teriyaki sauce.
  5. Stir-fry the marinated chicken in oil until cooked through and lightly browned, then add minced garlic.
  6. Shape onigiri by forming rice around chicken filling into triangles.
  7. Wrap each onigiri with nori for added flavor and texture.
