- Heat vegetable oil in a large skillet over medium-high heat. Add cubed lamb, browning it for about 5-7 minutes.
- Reduce heat to medium, add chopped onion and minced garlic to the skillet. Sauté for 3-5 minutes until translucent.
- Stir in curry powder, cumin seeds, and turmeric. Cook for 1-2 minutes until fragrant.
- Pour in the coconut milk and tomato paste, stir to combine and simmer for 2-3 minutes.
- Add diced potatoes and chopped carrots to the mixture, stir well and simmer on low for about 45 minutes.
- For slow cooker option, transfer everything and cook on high for 4-6 hours or low for 8-10 hours.
