Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
- In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined and frothy.
- Chop the diced ham and any optional vegetables, then set your shredded cheese aside.
- Pour a small amount of the egg mixture into each muffin cup, fill halfway, then layer with ham, cheese, and vegetables.
- Top each cup with more egg mixture until filled about three-quarters full.
- Bake in the preheated oven for 15-18 minutes or until they puff up and turn golden brown.
- Sprinkle fresh herbs and extra cheese on top, let cool slightly, then carefully remove from the muffin tin.
- Serve warm on a platter or directly from the tin.
