Ingredients

  • 2 pounds beef tenderloin trimmed
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar

Method

  1. Preheat your oven to 400°F.
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, Dijon mustard, balsamic vinegar, salt, and black pepper to create a herb paste.
  3. Rub the olive oil all over the beef tenderloin, then coat the tenderloin evenly with the herb paste.
  4. Heat a large oven-safe skillet over medium-high heat. Once hot, sear the beef tenderloin on all sides until browned, about 3-4 minutes per side.
  5. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 130°F for medium-rare.
  6. Remove the skillet from the oven and let the beef rest for 10-15 minutes before slicing.

Notes

  • For a richer flavor, consider adding a tablespoon of Worcestershire sauce to the herb paste.
  • If you prefer a different herb profile, try using fresh parsley and oregano instead of rosemary and thyme.
