- Start by combining sliced pork with soy sauce, minced garlic, and grated ginger in a bowl. Allow the mixture to marinate for at least 10 minutes.
- Bring a large pot of salted water to a rolling boil. Add thick chow mein or lo mein noodles and cook according to package instructions until al dente, typically about 5-7 minutes. Drain and rinse with cold water.
- Heat a large pan or wok over high heat and add oil. Once shimmering, add the marinated pork and stir-fry for about 3-4 minutes until browned and cooked through. Remove from the pan.
- In the same pan, add more oil if necessary, and toss in chopped cabbage, sliced mushrooms, and chopped green onions. Stir-fry for about 4-5 minutes until tender yet still crisp.
- Return the cooked pork to the pan with the sautéed vegetables. Add the drained noodles and pour in a splash of soy sauce, tossing everything together for an additional 2-3 minutes.
