  • 1 lb Asparagus Bite-sized pieces
  • 8 oz Mushrooms Sliced, shiitake or button preferred
  • 2 cloves Garlic Minced
  • 1 tsp Ginger Freshly grated
For the Sauce
  • 2 tbsp Soy Sauce or Teriyaki Sauce Use tamari or coconut aminos for gluten-free
  • 2 tbsp Sesame Oil Can replace with olive or vegetable oil
  • 1 tsp Red Pepper Flakes/Sriracha Optional, adjust to taste

Method
 

Step-by-Step Instructions
  1. Begin by washing and trimming your asparagus, cutting it into bite-sized pieces. Slice your mushrooms, ensuring they're ready to soak up flavor. Lastly, peel and devein the shrimp.
  2. In a large wok or non-stick pan, add 2 tablespoons of sesame oil and heat over medium-high heat.
  3. Once the oil is hot, add 2 minced garlic cloves and 1 teaspoon of freshly grated ginger. Stir-fry for 30 seconds.
  4. Introduce the shrimp to the wok, spread them out for even cooking and stir-fry for about 3-4 minutes.
  5. Next, add the prepared asparagus and mushrooms to the wok and cook for another 3-4 minutes.
  6. Drizzle in 2 tablespoons of soy sauce or teriyaki sauce, tossing all ingredients to coat evenly.
  7. Finally, drizzle a teaspoon of sesame oil over the stir-fry and toss one last time. Serve immediately.
