  1. Prep ingredients by cutting the stewing beef into uniform cubes, chopping onion, mincing garlic, and grating ginger.
  2. Combine the prepared beef, diced tomatoes, curry powder, coconut milk, onion, garlic, ginger, salt, and pepper in the slow cooker.
  3. Cover the slow cooker and set to low heat for 6 hours or high heat for 3 to 4 hours.
