- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or grease it lightly.
- In a skillet, add olive oil and sauté the chopped onion and minced garlic for about 5 minutes until translucent.
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, basil, sautéed onion and garlic, eggs, marinara sauce, Italian seasoning, salt, and pepper. Mix gently.
- On parchment paper, shape the meat mixture into a rectangular loaf about 1 inch thick.
- Sprinkle mozzarella over the meat mixture and add pepperoni or prosciutto if using.
- Roll the meat mixture into a log using the parchment paper for assistance.
- Place the rolled meatloaf seam-side down on the baking sheet and pour additional marinara sauce on top.
- Bake in the preheated oven for about 60 minutes, until it reaches an internal temperature of 160°F (70°C).
- Allow the meatloaf to rest for 15-20 minutes before slicing.
