- Combine ¼ cup of apple cider vinegar, 2 tablespoons of honey (or maple syrup), and 2 teaspoons of Dijon mustard in a bowl. Whisk until blended.
- Finely mince 1 clove of garlic and add it to the bowl with a pinch of salt and black pepper. Stir until garlic is integrated.
- While whisking, slowly drizzle in ½ cup of olive oil. Whisk for 1-2 minutes until the dressing thickens and emulsifies.
- Taste the dressing and adjust the seasoning with honey or vinegar as desired. Mix well.
- Chill for at least 30 minutes or serve immediately. Store leftovers in an airtight container.
